keto walnut rolls

Hey guys,

I’ve told you before, my husband is following the keto diet. Keto is mainly about healthy fats and proteins and you try to eat as little carbs as possible. Long term this diet is forcing the body to burn fat for fuel rather than carbohydrates.

So I created a recipe for my husband so he can still enjoy bread and breadrolls. Now, he hates cottage cheese and you might too – although this is one of the main ingredient, you won’t be able to taste it.

My favourite nut is by far the walnut, but you can replace anything with the same quantities of any other nut or nut flour. Just make sure you pick a flour with a low amount of carbs, if you wanted to keep it keto.

You will need: 5 medium size eggs, 200g cottage cheese, 100g walnut flour, 25g brown linseeds, 25g golden linseeds 100g walnuts – slightly crushed, 2 tbs phyllium husk, 15g baking powder, 2tbs cider vinegar 

Also: salt, pepper, nigella seeds and sesame seeds and a few walnuts for decorating the buns.

Crack the eggs, add salt and pepper and roughly mix them with a fork as if you’re about to make scrambled eggs. Open the cottage cheese and remove extend water from the pack. Add the cottage cheese to the eggs. Crush the walnuts with your hands and mix them with the linseeds. Add the dry ingredients to the egg-cheese-mixture and whisk for a minute. Don’t forget the vinegar, it makes the breadrolls less dense and you won’t be able to taste it once you’ve baked them.

Cover the mixture with a cloth and leave it alone for 15 minutes. In the meantime, pre-heat the oven to 180 degrees.

Put a sheet of baking paper or a silpat mat on a baking tray and add a bit of water to it so it’s slightly wet. Now rinse your hands under cold water and form 4-5 breadrolls with your hands. Because of the phyllium husk that absorbs a bit of moisture, they should keep their shape. Drizzle your seeds on top and push a walnut half on top of the breadrolls.

Put them in the oven for approx. 30-40 minutes. You should be able to easily remove them from the baking paper once they’re done.

The breadrolls will probably be a bit wet inside when you cut them open, I usually spread a bit of butter on top and put them under the grill to make them nice and crunchy. You can top them with absolutely anything, but if you’re strictly keto I recommend some bacon and avocado mash.
