With the "Shroom Fold" I've handed in an entry for the annual StrEATfood awards  by @contractcateringmag a few weeks ago and while I didn't get directly into the final, my entry got shortlisted to stand-by in case someone can't make it on the day or drops out. Little life update, because I've been quiet here in the last weeks after making big promises about the recipes and cool things I'm working on. A few hours after this photo got taken, my wonderful mother in law died. She had cancer and we knew it was a possibility she'd die, but we all hoped we just had a bit more time with her and had only just started planning Christmas. I loved this lady to bits and as expected, it really threw me and had a huge impact on everyone around me. I'm very excited to experiment with this, it's the first summer truffle I've ever bought (alongside lions mane & girolle) @mushroomery.uk School food needs to tick so many boxes, which is often overlooked: Cheap (often the number one priority), nourishing (my priority), versatile, but also recognisable by all children, no matter the cultural background, experience and food preferences. Not my usual content, but hey: Confit garlic with home-grown garlic (takes about a year, fyi) - all you need is 2 cups of olive oil, I used @filippoberio_uk , two big bulbs of garlic, a sprig of rosemary from the garden (flexing, I knoooow) and a bit of salt. Cover the garlic & rosemary with the oil, add salt and confit in the oven for 2h at 120 degrees. Is this healthy? Nope. Is it absolutely wonderful? 100 percent. Company comms are out - finally- and I can announce that after less than a year as full time nutritionist for Lunchtime Co., I have been promoted to "Head of Nutrition"  for educaterers and Lunchtime Co, focusing on healthy school food and catering for children with allergies, intolerances and medical diets. Freshly cooked food - school food or at home- does not need to be boring or plain, just because it involves children or you're trying to hit certain nutrients. People always ask me what I enjoy cooking and the honest answer is everything! Cooking is such a huge part of what I love, of my identity and I enjoy it greatly. Baking on the other hand... Story for a different day! Why the humble jacket potatoes deserve a top spot on the primary and high school menu in my opinion, apart from being steamy golden goodness: Quick recipe for the bread in my stories -
