A quick air fryer recipe, an adaptation of things I've seen online with a bunch of extra protein and fibre. In other news: when work gets stressful, it's even more important for me to focus on healthy habits and I'm so glad I managed to do exactly that since November. When it got darker towards the end of the year, I knew I would need to do something for myself so my mental health wouldn't take a nose dive and over the last few months I've established healthy eating habits, lots of walking (much to Minnie's delight), taking my vitamins and working out regularly. I normally don't talk about these kinds of things, as I am aware that building a routine like this is a privilege and is not possible for everyone, but I'm still proud of it. I built a mini workout space in our conservatory, as it was empty over winter, look out for varied and balanced meals with a focus on protein, fibre and iron and managed to up my daily average steps to 20.000. 6 weeks. 1500+ children with medical diet needs ranging from allergies, diabetes, arfid and dysphagia to PKU and coeliac disease. 170 schools with individual menus. Reworked my website, adding more about working for @lunchtimeco and my continuous development. Current obsession: Definitely truffle burrata from @tesco - does it have the healthiest of macros? No, as it has relatively high saturated fat content and is more creamy and richer than regular mozzarella with a medium amount of protein. Is it absolutely gorgeous as a treat every once in a while? Yes! Spent the day at various @lunchtimeco schools to photograph the food offer - today it was Parmigiana Chicken with Potato Wedges, Sweetcorn & Peas and Mac & Cheese with Homemade Garlic Bread and Seasonal Vegetables. Only a few weeks until Valentine's - these shortbread biscuits are super simple to make and you can really make them pop by dipping them into white chocolate or white candy melt, followed by freeze dried raspberries.
