The following dish is one of my favourites – originally my mum made it up on a rainy camping day we spent entirely in the tent, playing games and telling each other stories. None of us wanted to go to the beach to get kibbeling (cod, deep fried in small pieces) and chips, so we cooked this on a little gas stove instead.

You will need: 2 red onions, a pack of feta cheese, a pack of pasta, a few cloves of garlic, salt, pepper, a pinch of sugar, 2 cans of tinned tomatoes and about 50 ml of good olive oil. Yes, that’s all, I told you it’s an easy recipe. It gets cooked in one pot or pan, and even before it was trendy π or maybe my mum is a trendsetter, who knows?
Slice the onions and cut your garlic into small pieces. Heat the oil on low heat and add both onions and garlic into the pan or pot and stir until they are soft. Don’t brown them. When they are soft, add the tomatoes, the sugar, the salt and the pepper. Let the sauce simmer for roughly twenty minutes, then add the feta cheese and let it dissolve in the sauce. When the cheese has melted, add your pasta and let the pasta cook in the sauce. If it looks like your sauce is burning, just add a little bit of water until your pasta is fully cooked. Add salt according to your taste and enjoy.
