Sunday mornings are my favourite since I’m not working weekends anymore. I can wake up slowly, with a coffee and a nice conversation, rather than zombie-ing out of the house and realising at Clapham Junction that I’m neither wearing socks nor makeup, because I woke up at 5.30am.

So naturally my breakfasts are a little fancier these days – like these lush and cheesy breakfast waffles. These are really easy to make and you can even prep them in advance and then heat them up to get nice and crispy in the oven.
For 10 waffles you will need:
- 270 g flour
- 200g red leicester cheese, grated
- 400ml milk
- 50g soft butter
- 1 tbs thyme, paprika, dried garlic and rosemary
- 1 teaspoon of baking powder
- salt, pepper
- 4 eggs
- for the topping I made roasted garlic tomatoes, bacon and soft boiled eggs
Mix the eggs with the flour, baking powder, the herbs and the soft butter. Make sure all ingredients are thoroughly mixed before you add the milk. Mix for 2-3 minutes until all lumps disappeared and then add the cheese and mix for another minute.
Preheat your waffle iron and add a ladle of dough to the moulds and spread the dough to the corners. Do not overfill it. I usually put a few layers of kitchen roll underneath my waffle iron, just to make the cleanup easier in the end. Bake for roughly 5 minutes, until they are nice and golden. Keep in mind they are 30 percent cheese, so they might appear a little floppy when you take them out. Always use a wooden or rubber spatula and not metal to not scratch anything.
While I made my waffles, I simply put a pack of cherry tomatoes in the oven for 10 minutes. To enhance their flavours, I added some sea salt, garlic and olive oil. You can add crispy bacon and boiled eggs (these are Clarence Court Eggs), but let your mind run free and add whatever you’d like as toppings. How about crispy chicken and caramelised onions?

For a vegan version of this recipe, simply replace the cheese with vegan grated cheese, like “Applewood – Deliciously Smoky”, the milk with oatmilk and the eggs with 2 cooked & mashed potatoes.
