Woodland Carbonara

Woodland mushroom Carbonara –

I recently had a conversation with one of my colleagues about forest nurseries and schools and what a wonderful opportunity they are for children of all ages to learn more about nature and survival. In the context of this we were talking about how you can cook anything on the fire – apart from the typical bread, marshmallows and tea, which everyone has already done. I told him about our favourite campsite @badgellswood and that we usually go there several times a year. This year I cooked a beautiful carbonara on the fire, an absolute treasure after a day of spoon carving.

Recipe:
1 Pack of smoked bacon
1 Pack of pasta of your choice (we used Manfredine)
2 Clarence Court Eggs
1 Piece of Parmesan
1 Pack of @morrisons Woodland Mushrooms
1 White Onion
2 (or more) cloves of Garlic
1 Sprig of Thyme

Put your pan on the fire and heat up water in a second pot.
Slice the bacon and dice the onion.
Add to the pan and fry until crispy, then add the mushrooms and thyme and fry them in the bacon fat. Crush the garlic with the back of your knife and add to the mix.
Cook the pasta and add them to the pan. Grate the Parmesan cheese.
Thoroughly mix the pasta, the bacon and the mushrooms and take it off the fire. Add your seasoning, like salt and pepper. Add the parmesan and 2 egg yolks and stir.
Serve immediately and enjoy.
