Spent the day at various @lunchtimeco schools to photograph the food offer - today it was Parmigiana Chicken with Potato Wedges, Sweetcorn & Peas and Mac & Cheese with Homemade Garlic Bread and Seasonal Vegetables. Only a few weeks until Valentine's - these shortbread biscuits are super simple to make and you can really make them pop by dipping them into white chocolate or white candy melt, followed by freeze dried raspberries. Home-cured salmon. The traditional Christmas breakfast in our house! Couldn't have come out any nicer. Also, we finally found @theblackfarmer eggs. 'Tis the season for comfort food - what are your thoughts on ricotta, salmon & spinach stuffed conchiglioni, topped with ricotta in a fruity tomato sauce? Can't do any posting, too busy cooking up a storm behind the scenes. 🥰 Every time I think about my favourite season, which produce and meals I like best, I can't decide. Every season has its advantages, but autumn is definitely the hero of warm, cozy and comforting meals with its golden, orange and warm colours and textures. Just a woman, shopping for the perfect tomatoes ♥️ The temperature is dropping, the mornings and evenings are darker and we're naturally seeking comfort food: Soups, stews, hearty one pot meals that warm the heart & soul. It can be quite easy to forget focusing on vitamins, minerals and fibre in winter. My advice is to consciously add a vegetable or fruit to the less "health focused" meals. Carrot or cabbage in your mash, some fresh herbs and vegetables added right before serving in your soups and if you're desperate craving chocolate, have it. But also eat an apple or a handful of berries. Okay. I'm ready to admit summer might be over!
