Easter is near and I am putting an Easter Brunch together – pretty flowers, some sweets, candy eggs and lots of boiled eggs and carrots of course. I spent last Saturday morning the morning prepping, cutting, grilling and baking away, and among the bread muffins with egg-frosting, summer rolls with egg and crunchy vegetables and cheesy butterflies, I decided to go for Coronation Mayo.

Coronation Mayonaise is a dish, invented by two women of the Cordon Blue Cookery chool in London and it was for the late Queen’s coronation in 1953. It’s a popular sandwich filling in the UK and is also often used for salads. Its flavours fit spring perfectly in my opinion: creamy, slightly spicy with a hint of fruity sweetness. But I definitely wanted to feature carrot, so I came up with the Coronation Carrot Bunnies – crispy bunny shaped puff pastry, holding grilled carrot, covered in a curry mayonaise – sounds delicious, right?

For the crunchy bunnies you’ll need: 1 Roll of Puff Pastry, Sesame and nNgella seeds, 1 egg, 150g of Mayonaise, 200g Sour Cream, 10g of fresh Coriander, 1 spring onion,1 tbs of orange marmalade or mango chutney, a large spoon of mild Curry powder, a small chilli, 3 carrots, salt, pepper and olive oil – also a round cookie cutter and one that’s buny shaped
Roll out the puff pastry and preheat the oven to 190 degrees. Wash the carrots, slice them into fingers and put them onto a baking tray, then add salt, pepper and a bit of olive oil. Bake for roughly 25 minutes, then grill them for another 5 minutes. Set the oven back to baking.

In the meantime, cut out the same amount of circles and bunnies. Crack the egg into a small bowl and brush the bunnies with egg, then sprinkle with sesame and nigella seeds. Transfer onto a baking tray and bake for 15 minutes, or until they are golden.
Wash and cut the coriander and the spring onion, then mix the remaining ingredients in a bowl. Season to taste. Take the carrots out of the oven, let them cool down and cut them into small cubes. Mix with your curry mayo mix.
When the bunnies have cooled down, add a heap table spoon to the puff pastry circle and carefully put the bunnie shape on top.
